Make Your Own Protein Bar

Ingredients:

1 scoop Unjury Vanilla Protein Powder
1 tsp. cinnamon
1 cup rolled oats
2 Tbsp. coconut oil
½ cup natural peanut butter (or almond butter)
¼ cup honey
½ tsp. vanilla extract
1 Tbsp. water (if needed for smoother consistency)

Directions:

  1. In a food processor or high-speed blender, combine dry ingredients: protein powder, cinnamon, and rolled oats. Blend until the oats are ground into a fine powder.
  2. Add the melted coconut oil, peanut butter, honey, and vanilla extract to the mixture. Blend until everything is well combined.
  3. Test the mixture by scooping a small amount into your hand. If it holds together without crumbling, it's ready. If it crumbles, add a small amount of water and blend until the consistency improves.
  4. Line a 9 x 5-inch loaf pan with parchment paper or prepare a baking sheet. Press the protein mixture firmly into the pan or shape it on the baking sheet to about ½ inch thickness. Smooth the top for an even surface.
  5. Chill in the refrigerator for 2 hours or freeze for 30–40 minutes until firm.
  6. Remove from the pan or sheet, and cut into 8 squares.
