French Onion Protein Soup

Ingredients:
1 packet or 1 scoop Unjury French Onion Whey Protein Powder
1 cup water
1/2 small onion
1 slice Ezekiel bread
2 Tbsp. reduced fat mozzarella cheese
Directions:
1. Sauté 1/2 onion until caramelized, set aside.
2. Cut 1 slice of Ezekiel bread into 4 small squares.
3. Sprinkle bread with mozzarella cheese, then toast in a toaster oven to melt the cheese.
4. Make French Onion broth (pour 1 cup of water into a microwave-safe mug, place water in the microwave and heat until liquid reaches 140° F, gradually stir in Unjury protein, mixing well until combined).
5. Add sautéed onions and top with mozzarella cheese.
