Pumpkin Protein Balls

High in protein, easy to make, and great for meal prep, these energy balls are ideal for postworkout recovery, on-the-go snacking, or a guilt-free sweet treat.
Ingredients:
1 scoop Vanilla or Unflavored Protein Powder
1 cup old-fashioned oats
½ cup canned pumpkin purée (not pumpkin pie filling)
¼ cup nut butter (almond, peanut, or cashew)
2–3 Tbsp. honey or maple syrup (to taste)
1 tsp. pumpkin pie spice (or ½ tsp cinnamon + ½ tsp nutmeg)
1 tsp. vanilla extract
Optional: 2 Tbsp. mini chocolate chips or chopped pecans
Directions:
1. In a medium bowl, combine oats, protein powder, and pumpkin pie spice.
2. Stir in pumpkin purée, nut butter, sweetener, and vanilla. Mix until well combined.
3. If the mixture feels too dry, add 1-2 tsp. more pumpkin. If too wet, add 1-2 Tbsp. oats.
4. Fold in optional chocolate chips or nuts.
5. Roll mixture into ~12 bite-sized balls.
6. Refrigerate for at least 30 minutes to firm up.
Storage: Keep refrigerated in an airtight container for up to 1 week, or freeze for up to 2 months.
